QUICK & EASY CARROT KHEER


HAPPY MOTHER'S DAY to all the mothers..:).. Being a mum is not easy, you need to juggle so many activities, multitasking most of the times.. So anything that saves time is always a big bonus. Similarly in cooking too, if you could get a simple and easy recipe that not only gets cooked quickly but is super delicious too then its just awesome..Hence, on the occasion of mother's day, i share with  you a simple recipe to make CARROT KHEER. Key to preparing anything quickly is to have all the ingredients ready and little bit of multitasking ;)



I had invited some of my dear friends for dinner. The menu for the dinner was set but was struggling to decide what to make for dessert..Then spoke to mum in India and she suggested me this kheer.. Like always, my mum is always there to help:)).. I did not have whole milk so made this kheer with low fat milk, but believe me it came out super good..
So note down the ingredients..

INGREDIENTS:

  • 1 cup grated carrots (tightly packed)
  • 3 cups (24 oz or 720 ml) milk + 1/4 cup extra milk  soaking the cashews
  • 1/2 cup or 120 ml sweetened condensed milk (adjust as per your taste)
  • 8 no.s of Badam (Almonds)
  • 3 tbsp broken cashews
  • pinch of elaichi or cardamom powder
  • pinch of saffron
  • 1 tsp ghee
PROCEDURE:
  • Soak the badam in hot water. Separately soak the cashews in hot milk. Soak both of them for about 15-20 minutes. Later remove the skin of the almonds and grind the almonds and the cashews together along with the milk used for soaking the cashews in to a fine paste.




  • Meanwhile grate the carrots.

  • Take 1 tsp ghee in a thick bottomed pan and fry the carrots. This step is just to remove the raw smell of the carrots.


  • While you are frying the carrots, simultaneously heat the milk in the microwave. Before heating add a pinch of saffron to the milk. Heat the milk for about 6 minutes.


  • Once the  raw smell of the carrots has gone, add the hot milk to these carrots and mix well.

  • Add the badam - cashew paste and mix well. Bring it to a boil and then reduce the heat stirring regularly. 
  • Once you see the carrots have cooked, add the condensed milk and mix well. Simmer for 10-15 minutes.
  • Lastly add the cardamom powder and turn off the heat.


  • You can serve this kheer hot or cold. Either ways it tastes yummy:)

    1. i have a little one too.. so i know we need to sneak in the veggies and nuts somehow in there diet:)
