Thai Salad with Peanut butter dressing


Today, I am going to share with you a recipe for a super awesome salad. This is really special post, as this will be my first SALAD post:) Although, we begin our meal with a salad most of the time.. but somehow I never managed to post a salad recipe on the blog. I wanted my first salad post to be a special one. The recipe I chose is a Thai salad with a delicious peanut butter dressing.The most amazing part of this recipe is the dressing. It is so good that I could lick the entire bowl of the dressing:)








A few weeks back , I saw a Thai Salad recipe  in the website "Onceuponachef". The images , the ingredients, the flavors going in the salad were sooo good that I had to try it out. And so I did try and it was a super hit in my family. Thank you Jen for such a great recipe. Once you have all the ingredients in place, preparing this salad is a breeze. I stuck to the original recipe for the most part. I changed a few ingredients to suit my taste.





INGREDIENTS:
Note: All measurements are based on the US measuring cup and spoon sizes where 1 cup = 235 ml
Serves :4
For the dressing, you will need:
  • Peanut butter : 1/4 cup
  • Vegetable oil : 3 tbsp
  • Rice Vinegar : 2 tbsp
  • Soy sauce : 1 tbsp
  • Honey : 2 tbsp
  • Lime juice : 2 tbsp
  • Crushed Red chilli flakes : 1/2 tsp 
  • Garlic : 2 large (roughly chopped)
  • Ginger : 1 inch piece (roughly chopped)
  • Cilantro : 2 tbsp (roughly chopped)
  • Salt as per taste (remember, there is salt in rice vinegar and soy sauce, so add salt accordingly)
For the salad, you will need:
  • Romaine Hearts : 3 cups (chopped) (You can use Napa cabbage or cole slaw mix)
  • Baby spinach : 1 cup (roughly chopped)
  • Scallions/ green onions : 1 cup (thinly sliced)
  • Carrot : 3/4 cup (thinly sliced in to 1 inch pieces)
  • Lima beans : 1 cup (cooked) (You can use edamame beans instead)
  • Cucumber : 1 cup heaped (seeded, cut into half and thinly sliced)
  • Orange bell pepper (you can use any variety) : 1 cup heaped (seeded and thinly sliced)
  • Roasted peanuts ( I used chilli lime flavor) : 1/4 cup
PROCEDURE:
  • Dressing :Assemble all the ingredients needed for the dressing. Combine all the ingredients in the blender except cilantro in to a fine paste. Add the cilantro and roughly grind it. Dressing is ready:)




  • To prepare the salad: Assemble all the ingredients needed for the salad.Thrown in all the veggies in a big bowl. If you are serving the salad right away, drizzle the dressing on top of the vegetable and serve, else you can serve the dressing on the side so that the salad doesn't get soggy.

  5. An absolute stunner of a salad which happens to be family favourite too. What I loved about your salad is not only the choice of the salad mix, especially the Lima beans, but the brilliant texture and creaminess oozing peanut dressing. This is just what a supremely yummy salad should be, crunchy, refreshing, with a silky dressing and a powerhouse of flavours and goodness. The clicks are brilliant and I am craving for this salad right now.
