Phodnicha bhaat with a twist


Today I bring to you a simple Maharashtrian rice dish called "Phodnicha Bhaath"."Phodni"  in Marathi means tempering or tadka or vaghar and "Bhaath" means Rice. In this dish, rice is tempered with a lot of garlic, onion and spices.It works well when you have to use leftover rice but believe me, this dish tastes so good that sometimes I cook fresh rice just so that I can make this dish:) Just serve it with a raita or just plain yogurt and you will have a delicious meal on the table. Since it is so easy to make, it also serves as a great lunch box option.



Actually this is the second time that I am posting the recipe of this rice dish. You can seemy earlier post on PHODNICHA BHAAT here.This time , I have made a slight twist to the regular recipe. To add some nutrient value to this simple dish, I added metkut powder (For Metkut recipe click here). The addition of Metkut powder not only increases the nutrient quotient but also enhances the taste a lot. But in case you don't have Metkut powder handy or cannot prepare it, you can prepare the rice without its adding it.






INGREDIENTS:
Note: All measurements are based on the US measuring cup and spoon sizes where 1 cup = 235 ml
  • Cooked Rice (I used basmati rice) : 4 cups
  • Mustard seeds / rai : 1 tsp
  • Dried red chillies : 1 (broken)
  • Curry Leaves : 6-8
  • Turmeric powder / Haldi : 1 tsp
  • Red chilli powder : 1/2 tsp (adjust according to taste)
  • Onion (chopped) : 1 cup
  • Garlic (finely chopped) : 2 heaped tbsp
  • Peanuts : 2 tbsp
  • Metkut powder: 4 tbsp
  • Salt as needed
  • Cilantro leaves / dhania patta (chopped) : 2 tbsp
  • Oil : 2 tbsp
PROCEDURE:


  • Heat oil in a deep bottomed pan. Once hot, add the mustard seeds, curry leaves and dried red chillies. When the seeds start to splutter, add the peanuts. Fry until the peanuts slightly change color.
  • Add the onion and garlic.Cook until they get translucent.
  • Add the turmeric powder and red chilli powder. Mix well.
  • Add the cooked and cooled rice. Add metkut powder and salt. Mix gently.
  • Garnish with chopped cilantro leaves and serve warm with yogurt or raita of your choice:)

  1. That's a very delicious looking dish with a cleverly improved nutrient quotient. Delicious, heartwarming and easy to prepare if one has the metkut powder ready. I so wish I could taste it from the screen! Awesome!
