CHIA SEED PUDDING


Today , I will be sharing yet another healthy and nutritious breakfast recipe "CHIA SEED PUDDING". Mildly sweet, this recipe is excellent when you have a craving for something sweet but don't want too many calories along with it. Prepare it the night before and the next morning, a yummy breakfast is waiting for you when you wake up. Chia Seed Pudding, Steel-cut Oats porridge and Overnight oats are now regular breakfast options in our house:)








Last two months, I have been away from blogging and the online world as such. I was off to India and an had amazing time with family . It was after many many years that I went to India in summer and ate mangoes to my hearts content. I must have easily put on 3-4 kgs but i did not mind ;) I also got to eat amazingly good food prepared by my mom...yum yum yum...While in mum's house , I hardly cooked but learnt a lot of traditional south canara recipes from mum. Don't worry, I will be sharing them with you soon:)

So coming to today's recipe...CHIA SEED PUDDING.. It's a very simple recipe and takes hardly couple of minutes for preparation. I have tried to work with the sweetness of dates and that sweetness was just right for me. If you need more sweetness, you can always add in some agave nectar or maple syrup.

RECIPE is as follows:

INGREDIENTS:
Note: All measurements are based on the US measuring cup and spoon sizes where 1 cup = 235 ml
Serves 1
  • Chia seeds : 2 tbsp
  • Almond milk : 3/4 cup
  • Dates : 3
  • Cocoa powder : 1/4 tsp
  • Vanilla essence : 1/4 tsp
  • Almonds (chopped) : 3-4
  • Raisins : 1 tsp
  • Pistachios : 3-4
  • Fruits of choice  
  • Agave Nectar or Maple syrup (Optional for added sweetness)
METHOD:
  • Add the almonds milk, dates, cocoa powder and vanilla essence to a blender and blend it. You may add some honey for added sweetness
  • In a tall glass, add the raisins, almonds, pistachios and the chia seeds.
  • Pour the blended date-almond milk mixture. Mix well and let it rest for 10 minutes. Again , give it a good mix. Cover and refrigerate overnight.
  • Next morning, top it with the fruits of choice. You can use strawberries, mangoes, blueberries, kiwi or banana. Enjoy cold and delicious breakfast.



Notes:
  • The consistency of the pudding should be like in the picture below..

  • Mixing the chia seeds and the milk mixture two times is critical to getting a good consistency. 
  • In order to keep the recipe vegan, I have used almond milk  but you can use regular milk too.
