Diwali, the festival of lights is the biggest and brightest festival celebrated in India. Preparations for Diwali or Deepavali start few days before the Diwali night. We clean and redecorate our offices and houses.Along with shopping for new clothes for the occasion, we prepare many varieties of sweets and savory snacks for the occasion too.
On Diwali Night, we dress up in new clothes and light diyas (lamps/candles) inside and outside the house. We then worship and offer prayers primarily to Goddess Lakshmi. Soon after, fireworks start. Finally we have a big family feast that includes a variety of sweets. We later meet friends and exchange sweets and gifts.
Well this year, I started my Diwali preparations early. With most of the cleaning done, I decided to start with my sweets and snacks preparation. The first sweet that I prepared was "RICOTTA CHEESE BURFI". I had recently tasted it at my friend, Ketki's house and loved it. After getting the recipe from her,I decided to give it a try. The burfis came out perfect. A great texture and a super awesome taste.
So, with out much delay, let me share the recipe with you all too..:)
INGREDIENTS:
Note: All measurements are based on the US measuring cup and spoon sizes where 1 cup = 235 ml
- Ricotta Cheese : 30 oz (approx. 850 grams)
- Unsalted butter : 1 stick / 8 tbsp / 1/2 cup
- Sugar : 1 cup
- Dry milk powder : 1 cup
- Cardamom powder / Elaichi powder : 1/2 tsp
- Nutmeg powder : small pinch (optional)
- Saffron : 1 pinch
- Chopped pistachios : 2 tbsp
- Slivered Almonds / chopped almonds : 2 tbsp
- Everest milk Masala for garnish (This masalais an exotic nuts and spice blend. It is available in Indian stores. Instead of this masala, you can use coarsely crushed almonds and pistachios)
PROCEDURE:
- In a thick bottomed pan, melt the butter on low heat. To this melted butter, add the ricotta cheese, sugar and dry milk powder. Stir until well mixed. Turn off the heat.
- Pour this mixture into a microwave safe bowl. Add the saffron, chopped nuts, nutmeg powder and cardamom powder . Heat in the microwave on HIGH for 4 minutes. Remove and stir. Keep heating in intervals of 4 minutes stirring in between for a total of about 15-20 minutes or until you get a thick mixture (It should not be runny). Please note: Cooking time depends on the power rating of the microwave . So the cooking time might be little more or less than mentioned, so keep an eye after 15 minutes.
You should arrive at the consistency as seen in the picture above . This may take about 20- 22 mins. Cooking times might vary. |
- Once you get a thick mixture, pour the mixture in to a greased plate or tray. Sprinkle coarsely crushed nuts or Everest Milk masala on the surface .Refrigerate for a couple of hours. Cut in to squares and serve. Store the remaining burfi pieces in the refrigerator.

This is what I call truly melt in the mouth, yummy, creamy delight. That's an insanely delicious combination brought to a crescendo with the sprinkle of the crushed nuts special masala. Truly a befitting sweet for the Diwali celebrations. I am so drooling here imagining how it will break down on my tongue bring in a flood of water. Nom nom. Loved it.

ReplyDeleteHi Shubha. can you tell me why do we need to transfer the heating process to the microwave than continue over the flame?
ReplyDeleteSorry for the delay in replying. You can continue the process in the stove top itself but it takes a little longer time. Microwave cooking is faster plus you dont worry about the mixture sticking to the bottom of the pan (which is easily possible while cooking on stove top).
