Lemon Rice

This is my jatpat recipe on the days when i do not have much time to cook. Its simple ,easy and most of the ingredients are readily available in the pantry. I remember my mother making it often for my lunch box. Its also great when you have some leftover rice. Its a quick fix for a meal.

So here is the recipe..

  • Raw Rice : 1 cup
  • Lemon juice - 2 tbsp
  • Salt as per taste
  • Peanuts or groundnuts - 1/4 cup
  • Turmeric powder or haldi - 1/2 tsp
  • Green chillies (Slit) -2
  • Sugar - 1 tsp
  • Mustard seeds or rai- 1/4 tsp
  • Urad dal- 1/4 tsp
  • Dried red chillies- 2
  • Curry leaves - 4-5
  • Cumin seeds - 1/4 tsp
  • Hing - 1 pinch
  • Chana dal - 1/4 tsp
  • Oil - 2-3 tsp (I use nonstick kadhai, hence using less oil)
  • Cilantro (Coriander) leaves - 1 tbsp
  • Freshly grated coconut - 1 tbsp
  1. Cook the rice. The rice should be flaky and the grains should be separate. I use basmati rice and it turns out great when i cook it in microwave. While cooking in microwave i use the 1:3 ratio for rice and water.In my microwave, rice gets done in 18 minutes. Once the rice is cooked, I spread it in a big plate.
  2. Once the rice has cooled, add lemon juice, salt, sugar and haldi and mix well.Keep this aside.
  3. Heat some oil in a kadhai. When the oil is hot, fry some peanuts in the oil till the color of the peanuts change little. Then add the other tadka items like Cumin seeds, urad dal, chana dal, mustard seeds, hing, red chillies and curry leaves.Add the slit green chillies and mix well.
  4. Now add the rice mixture . Heat in a low to medium heat till the rice is nicely hot. 
  5. Sprinkle some Cilantro leaves and freshly grated coconut and serve
Note: As a variation, I fry some onion in the beginning with the tadka before adding the rice. Also instead of using peanuts, you can use cashewnuts.
