Lemon rice is simple rice dish flavored with lemon juice. This is my go-to recipe on the days when I do not have much time to cook. It's simple ,easy and most of the ingredients are readily available in the pantry. I remember my mother making it often for my lunch box. You can prepare fresh rice for this dish or use left over rice.
If you are cooking fresh rice to prepare this dish, then cool the rice completely before using in this recipe. This is very important or else you will end up with mushy rice.
So here is the recipe..
Ingredients:
Note: All measurements are based on the US measuring cup and spoon sizes where 1 cup = 235 ml
- Cooked and cooled rice : 5 cups (You can use left over rice)
- Lemon juice : 2 tbsp
- Salt as per taste
- Peanuts or groundnuts : 1/4 cup
- Turmeric powder or haldi : 1/2 tsp
- Green chillies (Slit) : 4
- Sugar : 2 tsp
- Mustard seeds or rai : 1 tsp
- Urad dal :1/2 tsp
- Chana dal - 1/4 tsp
- Dried red chillies : 4
- Curry leaves : 6-8
- Hing - 1 pinch
- Coconut oil : 2 tbsp
- Cilantro (Coriander) leaves - 1/4 cup
- Freshly grated coconut - 1/2 cup
Method:
- Heat oil in a deep bottomed pan. When the oil is hot, fry the peanuts. Once the peanuts have changed color, add the mustard seeds, urad dal and chana dal. When the mustard seeds start to splutter, add the green chillies, dry red chillies, curry leaves and asafoetida/hing. Fry for a minute.Turn off the heat.
- Now add the the fresh grated coconut, turmeric powder, salt , sugar and lemon juice. Mix.
- Now add the cooked rice and cilantro leaves.Mix gently.
- Quick , easy and delicious Lemon rice is ready to be served.
