Sabudana Vada

Sabudana vada is super yummmm... once you start eating it ... its difficult to stop...:).. In my household, I make fried items very less.I usually make fried items when its raining outside or is very cold.. Usually with the evening tea.
So here is my recipe for this yummy dish:)

INGREDIENTS:
  • Sabudana - 1/2 cup
  • Lemon juice - 2 tsp
  • Rice flour - approx 2 tsp
  • Red chilli powder - 1/4 tsp (or as per taste)
  • Peanut powder - 2 tbsp (Dry roast the peanuts, remove the skin and make a powder of the peanuts)
  • Ginger - 1/2 tsp
  • Cumin seeds or jeera - 1/2 tsp
  • Coriander or cilantro leaves - 1 tbsp chopped
  • Salt as per taste
  • Oil for deep frying
  • Potatoes - 2 medium (boiled and grated)
Method:
  1. Soak sabudana in water for about 4-5 hours. The level of the water should be just enough to cover the sabudana.
  2. By this time, the sabudana would have soaked in all the water and become plump. If still some water remains, just drain it.
  3. Now to this sabudana, add the grated potatoes, lemon juice, cilantro leaves, jeera, salt ,red chilli powder, ginger,rice flour and the peanut powder.
  4. Now apply some oil to your hands and make balls of the sabudana mixture and flatten them to make 1/2 inch thick patties.
  5. Heat oil in a frying pan. Make sure that the oil is only about half filled in the pan. This is because once you start frying , the oil starts to splatter.
  6. The oil should be very hot. If you fry the vadas in not so hot oil, they will absorb a lot of oil. So when the oil is very hot , drop the prepared patties in the oil.
  7. After some time, turn the vada over so that the other side gets cooked. 
  8. Once done, remove from the oil and drain the excess oil in a paper towel.
  9. Serve hot with tomato ketchup or cilantro chutney.
Note:
  • Instead of using red chilli powder, you can use chopped green chillies.
  • Instead of using lemon juice, you can use yoghut. Mix the yoghurt  with water used to soak the sabudana. This is how my mom-in-law makes and it turns out equally good.

  5. @pari: yep usage of rice flour does making slightly crispy but during "vrath" days i omit the rice flour:)
