Oats Porridge (Steel-cut oats porridge )



Today , I will be sharing a delicious recipe for Oats Porridge . This recipe uses Steel-cut Oats . This pudding can be eaten as breakfast or even as a warm dessert. I have loaded this pudding with nuts and raisin . I have also added some spices like nutmeg, turmeric and cinnamon. You can add or remove any of these spices according to your taste. Some times, I use cardamom instead of cinnamon. So feel free to adjust the spices according to your liking. This recipe is vegan.









There are few types of Oats available in the market. They are Steel-cut oats, rolled oats and instant oats. Steel cut oats, also known as Irish oats or pin head oats are grouts  (inner kernel with most husk removed) of the whole oats which has been chopped to a few pieces. The steel cut oats actually look like wheat grains that have been chopped. These oats are further processed to make rolled oats or instant oats.



Steel cut oats derived their name from the process by which they are obtained. Large steel blades are used to chop the oats in to pieces. These variety of oats take longer to cook and have a nutty, chewy texture. They retain most of their shape once cooked. Hence they are perfect for making porridge.



Rolled oats (old fashioned oats) are processed from whole oats . The whole oats are first steamed and then pressed to flatten them. I have used rolled oats in my recipe.. Masala Oats and Overnight Oats. Now, the third variety is the Instant oats which are the most processed. They do not retain their texture when cooked and get quite mushy.



Now coming back to the recipe, we will be using steel-cut oats. You cannot replace these oats with rolled oats or instant oats. So just use STEEL CUT OATS only because we need texture, a little nuttiness in our porridge. A dear friend of mine introduced me to this porridge and I loved it. I have used almond milk in this recipe. You may substitute it with coconut milk too.




INGREDIENTS:
Note: All measurements are based on the US measuring cup and spoon sizes where 1 cup = 235 ml
Serves 2
  • Steel cut Oats : 1/4 cup
  • Dates : 4-5
  • Salt : just a pinch
  • Almond milk : 1 cup
  • Raisins : 5-6
  • Almonds : 5-6 (sliced)
  • Pistachios : 5-6 (chopped)
  • Nutmeg : 1/8 tsp
  • Turmeric powder : 1/8 tsp
  • Cinnamon : 1/4 tsp
  • Dry ginger powder : 1/8 tsp
  • Jaggery  as per taste (Optional ..See Notes)
PROCEDURE:
  • Cook the Oats in 2 cups of water. (You may pre-soak the oats for couple of hours to reduce the cooking time.)
  • Once the oats are cooked, add the almond milk, jaggery, dates ,nuts and raisins. Cook on low heat until the porridge starts to thicken.
  • Add the nutmeg powder, cinnamon powder, turmeric powder, dry ginger powder and salt. Mix well.
  • Serve warm.
NOTES:
Usage of jaggery is optional. You can skip jaggery and add some honey just before serving the oats.
You can use regular milk for the porridge . Remember, if you use honey or milk, then the recipe will not be vegan.

    Too filling for a desert!
    Best to have this for a Brunch. Back in India, I will have to search for Steel cut Oates.
    As usual the pictures are superb and inviting.
    Also, got to know more about Oates variants too.

  3. I love eating oats porridge at least once a week! Your recipe is very nice but the steel cut oats I used take 40 minutes to cook with 4 cups water.There are quick ones too in Costco but I like to buy the whole grains.

    1. Try soaking the oats for couple of hours in hot water.. it drastically reduces the cooking time..Yes, i too like whole grains..:)
