Instant Rava Idli (steamed in the Instant Pot)

Instant rava idli is one of our most favorite breakfast or brunch items and is prepared often over the weekends. Since it doesn't require any fermenting, it can be prepared in a jiffy. I have prepared this idli  today with the basic tadka or tempering. You can very well convert this into an elaborate one by adding shredded veggies like carrots and also cilantro/dhania.

Mangalore buns / Banana poori

Mangalore buns or Banana  poori are a mangalorean speciality. Growing up, my mum would make it often whenever we had too many ripe bananas lying around. Nowadays , we have the option of making Banana Bread  but in those days, mangalore buns is what my mum would make.

Really ripe bananas work really well in this recipe. The dough is prepared mixing together bananas, yogurt, sugar and flour into a dough. It is set aside for a good 5-6 hours. Later, the dough is kneaded again. We make small balls out of the dough. Roll them out into circles just like poori (remember not to roll too thin). They rolled circles and then deep fried.

Snake gourd core chutney

Some time back, I had shared a recipe of Snake gourd curry in my blog. I had mentioned then that the core could still be used in another recipe. We will be using the core to make a delicious chutney. Snake gourd core chutney tastes perfect eaten with rice with some coconut oil drizzled on top. You can also serve it with idli or dosas.

Capsicum Chutney / Bell Pepper Chutney

Capsicum chutney is a delicious chutney that pairs well with any dosa , uttapam or idli. This is a wonderful alternative to the traditional coconut chutney. I make these type of alternative chutneys when I am short on coconut or just as a pleasant change from the usual coconut chutney.
