Mumbai style Vegetable Sandwich



Mumbai style Vegetable Sandwich is not only a very popular street food but also a commonly prepared breakfast in common households. It also makes for a great lunch box option. 

Mumbai-style Vegetable sandwich can be prepared in a jiffy. You can prepare the cilantro-mint chutney well in advance. Also you can cook beets and potatoes in advance too. Just before its time to serve, slice up the veggies , spread the chutney on the bread, sprinkle some chaat masala, layer with sliced veggies and serve. The same sandwich can also be grilled and served as a grilled vegetable sandwich.





Growing up, Sunday breakfasts were very special. On Sundays ,the entire family would come together to prepare our favorite breakfast "Vegetable Sandwiches". Mum would prepare the chutney, we kids would cut the vegetables in to thin slices. Dad would then assemble the sandwich and cut it up in to 4 pieces. We kids would eagerly wait for these spicy sandwiches with plates in our hands :) Ahhh ..such good old days:) Even now, when I visit my parents, we do a sandwich day atleast one time:)

INGREDIENTS:
  • 6-8 slices of bread (Use thick slices of bread)
  • 1 Cucumber (sliced)
  • 1 large beet root (boiled and thinly sliced)
  • 1 large potato (boiled, peeled and thinly sliced)
  • 1 medium red onion (peeled and thinly sliced)
  • 2 medium tomatoes (thinly sliced)
  • Chaat masala
  • Cilantro mint chutney
  • Butter or butter equivalent spread
PROCEDURE:
  • Apply butter and the cilantro-mint chutney to one side of the bread and set it aside.



  • Take two slices of the prepared  bread in a clean flat surface.
  • Sprinkle some chaat masala over the bread.
  • Place slices of cucumber, tomatoes, beets, potatoes and cucumber again on one slice of bread. 




  • Cover it with the other bread.Press and cut it into 4 triangles.


  • Repeat the process with the rest of the slices.


For the grilled version :
  • Heat the grill or panini press.
  • Prepare the sandwich as mentioned above.
  • Apply butter to the top surface of the sandwich.

  • Place the butter side of the sandwich on the grill or the panini 



  • Apply the butter on the other side. Close the panini press. (If using a grill pan, the apply some pressure on top of the sandwich so that the bottom surface get clear grill marks.After a couple of minutes, flip the sandwich and repeat the process.)

  • Serve grilled sandwich with some tomato ketchup.
